Lentil Soup Recipe

Recipe:

1 cup red lentils

5 cups unsalted chicken broth

2 tablespoons light olive oil

1 onion

1/2 teaspoon cumin

1/2 teaspoon coriander

1/2 teaspoon salt

1/2 teaspoon minced garlic

Pinch black pepper

Sautee lentils in olive oil for 3-5 minutes.

Add broth.

Bring to a boil.

Simmer for 30 minutes uncovered, stirring occasionally.

Add salt, pepper, cumin, coriander, and garlic.

Chop 1 onion and fry in a pan until golden brown.

Garnish soup with fried onions.

Serve with lemon wedge as pictured.
